Effect of far-infrared irradiation on the antioxidant activity of defatted sesame meal extracts.

چکیده
To determine the effect of far-infrared (FIR) irradiation on the antioxidant activities of sesame meal, half of sesame seeds were FIR-irradiated and then oil was extracted from the seeds. The resulting defatted sesame meal (DSM) was extracted with methanol, and the antioxidant activities of methanolic extract were determined. FIR irradiation of sesame seeds for 30 min increased the total phenol content from 34.0 to 59.0 muM and radical scavenging activity of DSM extracts from 26.40 to 68.76%. The induction time of lipid oxidation of oil added to extracts was also retarded from 0.82 to 0.96 h. According to the gas chromatography-mass spectrometry analysis, several low molecular weight phenolic compounds, such as p-hydroxy benzoic acid, vanillic acid, p-coumaric acid, isoferulic acid, and o-coumaric acid, were frequently detected in FIR-irradiated DSM extracts as compared to unirradiated ones. These results indicated that FIR irradiation of sesame seeds increased the antioxidant activity of methanolic extracts of DSM.

Preliminary Studies on Antioxidative Potentials of Extracts of Defatted Locust Bean Condiment
Preliminary investigation on antioxidative potentials of defatted fermented locust bean extract in comparison to defatted non-fermented locust bean was conducted. Qualitative antioxidative assessment on the extract was accomplished by screening the phytochemical endowment, and similar bioactive components. Also some antioxidative indices were quantitatively evaluated. Results showed that the de...
متن کاملAntioxidant Properties of Far Infrared-Treated Rice Hull Extract in Irradiated Raw and Cooked Turkey Breast
The antioxidant effect of far infrared–treated rice hull (FRH) extracts in irradiated turkey breast meat was compared with that of sesamol and rosemary oleoresin. The FRH extracts significantly decreased thiobarbituric acid-reactive substances values and volatile aldehydes (hexanal, pentanal, and propanal) and was effective in reducing the production of dimethyl disulfide responsible for irradi...
متن کاملImprovement of the Oxidative Stability of Sesame Oil Using Spirulina as a Natural Antioxidant
Background: Nowadays, natural antioxidants are used to replace synthetic antioxidants for delaying or preventing the oxidation of edible oils. In this study, phenolic compounds and antioxidant properties of methanol extracts of Spirulina microalgae (Arthrospira platensis) were measured. Methods: Phenolic content was measured by Folin–Ciocalteau method and antioxidant activity was measured by th...
متن کاملThe Effect of Non-thermal Processing of Hyssopus officinalis on its Antioxidant and Antimicrobial Activities
Hyssopus officinalis L. is one of the most important medicinal plants. Medicinal herbs are contaminated by microorganisms. Conventional methods for reducing of microbial loads such as ethylene oxide, propylene oxide and also use of steam are hazardous and instead, non-thermal process such as microwave and gamma radiation are being used widely in order to eliminate the microbial contaminations ...
متن کاملEvaluation of amino acid composition and protein solubility profile of commercially available sesame and groundnut seed meal
Sesame and groundnut are important crops and a source of edible oil and protein. Amino acid content of both meals was analyzed and studies made on the protein solubility of defatted sesame and groundnut meal in aqueous solution over various pH and in various salt solutions. Valine, isoleucine, arginine, aspartic acid and glutamine were present in high concentration in both the defatted meals. A...
